Peanut Butter and Banana Healthy(ish) Muffins

These muffins are sooo good and they are gluten and dairy free! The recipe only takes a few minutes to whip up and you are left with these yummy and moist muffins.



Equipment


Ingredients

  • 2 ripe bananas

  • 2 eggs

  • 1 cup creamy peanut butter

  • 1/4 cup maple syrup

  • 2 tablespoons honey

  • 1 tablespoon vanilla

  • 1/2 teaspoon baking soda

  • 1 cup chocolate chips

  • Walnuts to top (optional)


Instructions

  • Preheat oven to 375°F

  • Grease muffin pan with cooking spray

  • Peel and mash bananas

  • Add bananas, eggs, peanut butter, maple syrup, honey, vanilla, and baking soda to bowl and mix for 1-2 minutes until smooth

  • Mix in chocolate chips

  • Evenly divide the batter between the 12 muffins (should fill them about 3/4)

  • Bake for 12-15 minutes or until a toothpick comes out clean

  • Transfer muffins to a cooling rack
